Fava beans with avocado, roasted cherry tomatoes and eggs

Recipe for 2 persons, 10 minutes preparation, 20 minutes cooking

Ingredients

  • California Garden Fava Beans Egyptian Recipe – 1 can

  • Boiled Egg – 1

  • Avocado, sliced – 1

  • Basil leaves – 10

  • To roast tomatoes:

  • Cherry tomatoes, halved – 10

  • Olive oil – 1 tablespoon

  • Salt to taste

  • Black pepper to taste

Preparation

Step 1

Place cherry tomatoes on a pan lined with parchment paper. Season with salt and black pepper and drizzle with olive oil. Bake in a preheated oven at 180 degrees for 10-15 minutes until tomatoes are soft. Once the tomatoes are ready, remove from the oven and set aside to cool.

Step 2

In a pot over medium heat, place California Garden Fava Beans Egyptian Recipe and heat for 5 minutes. Transfer to 2 serving bowls.

Step 3

Garnish each bowl with half an egg, avocado slices, roasted cherry tomatoes and basil leaves. Serve immediately.

 

Fava beans with red cabbage, colored bell peppers and feta cheese

Recipe for 2 persons, 10 minutes preparation, 5 minutes cooking

Ingredients

  • California Garden Fava Beans Egyptian Recipe – 1 can

  • Red cabbage, thinly shredded – ¼ cup

  • Colored Bell peppers, thinly sliced – ½ (¼ yellow ¼ red)

  • Feta cheese, crumbled – 2 tablespoons

  • Cilantro leaves (to garnish)

Preparation

Step 1

In a pot over medium heat, place California Garden Fava Beans Egyptian Recipe and heat for 5 minutes. Transfer to 2 serving bowls.

Step 2

Add red cabbage and colored bell pepper to each bowl. Garnish with Feta cheese and cilantro. Serve immediately.

 

Fava beans with sweet potato, kale, and goat cheese

Recipe for 2 persons, 10 minutes preparation, 20 minutes cooking

Ingredients

  • California Garden Fava Beans Egyptian Recipe – 1 can

  • Large Sweet Potato peeled and cut into cubes – 1

  • Salt to taste

  • Black pepper to taste

  • Olive oil – 1 tablespoon

  • Kale, chopped – ¼ cup

  • Goat cheese, crumbled – 2 tablespoons

  • Scallions and Carrot flowers (to garnish)

Preparation

Step 1

Spread sweet potato cubes on a baking sheet lined with parchment paper. Season with salt and black pepper and drizzle with olive oil. Roast in a preheated oven at 200 degrees for 10-15 minutes. Once done, remove from oven and set aside to cool.

Step 2

In a pot over medium heat, place California Garden Fava Beans Egyptian Recipe and heat for 5 minutes. Transfer to a serving bowl. Add roasted sweet potatoes, kale and scallions.

Step 3

Garnish with crumbled goat cheese and carrots. Serve immediately.
