Ingredients

  • California Garden Chickpeas, drained - 1 can

  • Vegetable oil - 3 tablespoons

  • Chicken breast, cubed - 700 grams

  • Onion, finely cubed - 1

  • Garlic cloves, minced - 4

  • Turmeric - 2 teaspoons

  • Yellow curry powder - 2 tablespoons

  • Garam masala - 2 teaspoons

  • Cardamom powder - ½ teaspoon

  • Ginger, grated - 2 tablespoons

  • Chicken stock - 1½ cups

  • Salt - to taste

  • Black pepper - to taste

  • Yogurt - 1 cup

  • Basmati rice, cooked - 4 cups

Preparation

Step 1

Heat vegetable oil in a pan over medium heat. Add chicken cubes, brown it for 4-5 minutes then transfer to a dish and set aside.

Step 2

To the same pan, add onion and garlic. Sauté until tender, then add turmeric, curry, garam masala and cardamom. Cook for 2 minutes, stirring constantly.

Step 3

Return browned chicken to the pan. Add ginger and chicken stock. Season with salt and black pepper. Cover and simmer for 10 minutes.

Step 4

Add yogurt and California Garden chickpeas. Stir well and cook for an additional 5-10 minutes.

Step 5

Serve alongside cooked basmati rice.
