California Garden Fava Beans Plain Medammes - 1 can
Tahini - 3 tablespoons
Cumin - 1 teaspoon
Olive oil to taste
To prepare duqos sauce:
Garlic - 3 cloves
Chili green pepper, chopped - 1 tablespoon
Tomato - 1
Cilantro - 1 handful
Salt to taste
Black pepper to taste
Tamees bread
Charcoal
Foil
Olive oil
To prepare duqos sauce: In a chopper/food processor, process garlic, green pepper, tomato, cilantro, salt and pepper.
In a pot over medium heat, place fava beans and heat for 5 minutes. Turn off the heat. Place a piece of foil shaped like a small cup in the pot. Add olive oil then a heated charcoal. Cover the pot. Let sit for around 5 minutes then remove foil.
Transfer smoked fava beans to a serving bowl and partially mash them. Add ¾ quantity of duqos sauce, 2 tablespoons tahini, cumin and olive oil. Mix until combined.
Garnish with remaining quantity of duqos sauce and tahini. Serve with tamees bread.
