1.5 kg Yogurt
1/3 cup Tahini
3 Garlic cloves, finely crushed
1 teaspoon Salt
3 small loaves Arabic pita bread, cut into cubes
30 grams Butter
2 cans California Garden Fava Beans Lebanese recipe
¼ cup Almonds
¼ cup Pine nuts
40 grams Butter
In a bowl, beat yogurt then add tahini, garlic and salt and mix until combined. Set aside.
Melt butter in a pan over low heat and fry in bread cubes until crispy. Line in the bottom of a serving dish.
Heat California Garden Fava Beans for 5 minutes over medium heat. Pour ¾ of the quantity over the bread. Mash the remaining fava beans and chickpeas using a potato masher then transfer to the serving dish. Top with the yogurt mixture.
To brown the nuts, melt butter in a pan then add almonds. Keep stirring. When they start to brown, add pine nuts and keep stirring until all nuts are golden. Transfer on top of the yogurt sauce layer with the melted butter. Garnish with cumin and paprika and serve.
