Fava Beans Eggplant Boat

Ingredients

  • 10 around 1 kilogram of medium-sized Italian eggplants, cut in half

  • 2 tablespoons + ¼ cup vegetable oil

  • 1 large-sized onion, chopped

  • 400 grams minced beef

  • salt to taste

  • black pepper to taste

  • ¾ cup California garden fava beans mashed salsa recipe

  • 2 cups yogurt

  • 1 cup tahini

  • ½ cup lemon juice

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ to ½ cup water

  • Chopped cilantro to taste

  • Sliced red chili pepper to taste

  • 2 tablespoons toasted pine nuts

Preparation

Step 1

Scoop out the eggplant flesh and set aside. Brush the insides and outsides of the boats with ¼ cup vegetable oil. Place the boats skin down, on a baking dish lined with parchment paper. Bake in a preheated oven at 180 degrees Celsius for 20 minutes. Take out of the oven and set aside to cool slightly. Chop the eggplant flesh, place in a bowl and set aside.

Step 2

Heat 2 tablespoons of vegetable oil in a pan over medium heat. Add onion and sauté until translucent. Add minced beef and cook until the latter is no longer pink. Season with salt and black pepper then add chopped eggplant flesh. Lower the heat and cook until eggplants are cooked through. Set aside.

Step 3

In a bowl, combine yogurt, tahini, lemon juice, salt, black pepper and water. Mix well then spread in the bottom of a baking dish. Add eggplant boats on top. Bake in a preheated oven at 180 degrees Celsius for 20 minutes until the sauce thickens a bit.

Step 5

Take eggplant boats out of the oven. Garnish with cilantro, red chili pepper and toasted pine nuts.
