Ingredients

  • California Garden Fava Beans, drained – 1 can

  • Butter – 30 grams

  • Pita bread, cut into squares – 3 loaves

  • Yogurt – 1 cup

  • Garlic cloves, minced – 3

  • Cumin powder – ½ teaspoon

  • Lemon juice – 3 tablespoons

  • Tahini – 2 tablespoons

  • Salt – To taste

  • To garnish:

  • Butter – 40 grams

  • Almonds – 2 tablespoons

  • Pine nuts – 2 tablespoons

  • Cumin – 1 teaspoon

  • Paprika – 1 teaspoon

Preparation

Step 1

Melt butter in a pan over low heat and fry in bread cubes until crispy. Remove from heat and set aside.

Step 2

In a small pot over medium heat, combine California Garden fava beans and ¼ a cup of water. Simmer for 10 minutes so that the fava beans are heated through. Remove from heat and set aside.

Step 3

In a bowl, mix together yogurt, garlic, cumin, lemon juice, tahini and salt.

Step 4

To garnish, melt butter in a pan then stir in almonds. When the latter start to brown, add pine nuts and keep stirring until all nuts are golden.

Step 5

Arrange baked pita bread in a serving dish. Add a layer of fava beans, followed by the yogurt mixture. Garnish with fried nuts, cumin and paprika. Serve immediately
