California Garden Light Tuna Solid in Brine – 2 cans
Whole-wheat bread slices – 8
Olive oil – 3 tablespoons
Lettuce leaves – 4
Green olive slices – 4 teaspoons
Lemon juice – ¼ cup
To prepare the sauce:
Dijon mustard – 2 teaspoons
Lemon juice – 2 teaspoons
Olive oil – ¼ cup
Black pepper – ½ teaspoon
Place bread slices on a baking pan lined with parchment paper and brush with olive oil. Bake in a preheated oven at 180 degrees for 10 minutes until golden. Take the bread out of the oven and set aside to cool.
To prepare the sauce: in a bowl, mix together Dijon mustard, lemon juice, olive oil and black pepper.
Spread 1½ teaspoon of the sauce on one slice of toasted bread. Add 1 lettuce leave, ½ a can of California Garden tuna and 1 teaspoon of green olives. Drizzle with lemon juice and top with another slice of toasted bread. Repeat until the quantities are finished and serve immediately.
