To prepare the stuffing:
California Garden Peeled Fava Beans, slightly mashed – 1 can
Onion, chopped – 1
Garlic cloves, minced – 1 teaspoon
Olive oil – 2 tablespoons
Tomatoes, chopped – 1
Eggs – 3
Lemon juice – 1 teaspoon
Parsley, chopped – ¼ cup
Chili powder – ½ teaspoon
Salt – ½ teaspoon
Black pepper – ¼ teaspoon
Cumin – ½ teaspoon
Butter, melted – 1/3 cup
To prepare the dough:
Active dry yeast – 1 tablespoon
Sugar – 1 tablespoon
Lukewarm water – 1 cup
All-purpose flour – 3 cups
Powder milk – 3 tablespoons
Vegetable oil – ¼ cup
To prepare the dough: In a bowl, mix together yeast, sugar and ½ a cup of lukewarm water. Let the mixture sit for 15 minutes.
In a large bowl, mix together flour and milk. Whisk in oil and yeast mixture. Gradually add the rest of the water and knead until you get smooth dough. Cover with plastic wrap and let sit for 1 hour until the dough rests.
To prepare the stuffing: in a pan over medium heat, sauté onion and garlic with olive oil until golden. Transfer to a large bowl. Add California Garden peeled fava beans, tomato, eggs, lemon juice, parsley, chili powder, salt, black pepper and cumin. Mix ingredients until combined.
Shape dough into even-sized balls and roll the latter on an oiled flat surface until you get circles.
Take a piece of rolled dough and place it on your working surface. Add a bit of the fava beans mixture. Top with another piece of rolled dough and press the edges to make sure they stick. Repeat until the quantities are finished.
Heat a pan over medium heat. Place a piece of hawawshi in the pan and brush with melted butter. Cook until the bottom is golden, the turn and brush the other side with melted butter. Cook until well done and golden. Repeat until the quantities are finished. Serve immediately.
