Mutabbaq sheets - 1 pack
Vegetable oil - 2 tablespoons
To prepare the filling:
California Garden Red Kidney Beans - ½ cup
California Garden Whole Kernel Sweet Corn - ½ cup
Egg, beaten - 2
Scallions, chopped - ½ cup
Leek, chopped - 1 cup
Large Tomato, chopped - 1
Salt - to taste
Black pepper - to taste
In a bowl, combine California Garden Red Kidney Beans, California Garden Whole Kernel Sweet Corn, eggs, scallions, leek and tomato. Season with salt and black pepper.
On your working surface, layer 2 sheets of Mutabbaq sheets, one on top of the other. Add a bit of stuffing mixture in the center. Fold the sides of the dough inwards to get a square-shaped pastry. Repeat until quantities are finished.
Heat vegetable oil in a pan over medium heat. Add one of the mutabbaq pastries and cook from both sides until golden. Repeat until quantities are finished. Serve immediately.
