California Garden Sliced Mushrooms – ¼ cup
California Garden Whole Kernel Sweet Corn – ¼ cup
Vegetable oil – 1½ tablespoons
Chicken breasts, cubed – 450g
Dried thyme – 1 teaspoon
Black pepper – ¼ teaspoon
Salt – ¼ teaspoon
Onion, chopped – 1
Olive oil – 2 tablespoons
Carrot, sliced – 2
Marrow, sliced – 2
Cooked Pasta – 4 cups
Ready-made pizza sauce – 2 cups
Mozzarella cheese, shredded – 1 cup
Beef pepperoni slices – ¼ cup
In a pan over medium heat, heat the vegetable oil and add chicken cubes. Season with thyme, black pepper and salt. Stir fry until chicken cubes are cooked through then remove from heat and set aside.
In a pan over medium heat, sauté onions with 1 tablespoon of olive oil until translucent. Remove from heat and set aside.
In pan over medium heat, sauté carrots and marrows with the remaining quantity of olive oil until tender. Add California Garden mushrooms, cook for 5 minutes then remove from heat and set aside.
In a bowl, mix together cooked pasta, pizza sauce, California Garden corn, chicken mixture, cooked onions and carrots-marrows mixture.
Spread the pasta mixture in a baking dish. Sprinkle with shredded mozzarella cheese and top with pepperoni slices. Bake in a preheated oven at 200 degrees for 15-20 minutes until cheese melts. Serve immediately.
