California Garden Fava Beans Medammes, drained - 1 cup
Water - 2 cups
Large onion, quartered - 1
Garlic, minced - 1 tablespoon
Dill, chopped - 1 cup
Parsley, chopped - 1 cup
Cilantro, chopped - 1 cup
Cumin - 1 teaspoon
Dried mint - 1 teaspoon
Salt - to taste
Black pepper - to taste
Chicken stock - 1 cube
To garnish:
Vegetable oil - ½ cup
Large onion, sliced - 1
Heat vegetable oil in a pan over medium heat, then add sliced onion and cook until browned. Transfer to a serving dish lined with kitchen towels and save the oil.
In a pot over medium heat, combine California Garden Fava Beans Medammes, water, and onion. Add garlic, dill, parsley, and cilantro. Bring to a boil, then turn off the heat.
Transfer fava beans mixture to a blender. Add cumin, mint, salt, black pepper, chicken stock and the saved quantity of vegetable oil. Blend the mixture until smooth. Return to the pot and bring to a boil.
Pour Bessara into bowls. Garnish with fried onions and serve immediately.
