Ingredients

  • California Garden Fava Beans Medammes, drained - 1 cup

  • Water - 2 cups

  • Large onion, quartered - 1

  • Garlic, minced - 1 tablespoon

  • Dill, chopped - 1 cup

  • Parsley, chopped - 1 cup

  • Cilantro, chopped - 1 cup

  • Cumin - 1 teaspoon

  • Dried mint - 1 teaspoon

  • Salt - to taste

  • Black pepper - to taste

  • Chicken stock - 1 cube

  • To garnish:

  • Vegetable oil - ½ cup

  • Large onion, sliced - 1

Preparation

Step 1

Heat vegetable oil in a pan over medium heat, then add sliced onion and cook until browned. Transfer to a serving dish lined with kitchen towels and save the oil.

Step 2

In a pot over medium heat, combine California Garden Fava Beans Medammes, water, and onion. Add garlic, dill, parsley, and cilantro. Bring to a boil, then turn off the heat.

Step 3

Transfer fava beans mixture to a blender. Add cumin, mint, salt, black pepper, chicken stock and the saved quantity of vegetable oil. Blend the mixture until smooth. Return to the pot and bring to a boil.

Step 4

Pour Bessara into bowls. Garnish with fried onions and serve immediately.
