1 tablespoon Vegetable oil
1 Onion, finely chopped
2 Garlic cloves, finely chopped
1 teaspoon Cumin powder
1 can California Garden red kidney beans, drained
2 teaspoons Paprika
6 tablespoons Ready-made Mexican tomato salsa
½ can California Garden whole sweet corn
4 tablespoons Canned chopped jalapenos
8 Flour tortillas
100 grams Cheddar cheese, grated
Sour cream to taste
In a large pan, heat the vegetable oil and cook the onion and garlic for 2 minutes. Add California Garden red kidney beans, paprika, cumin and some water.
Using a potato masher, break the beans down as they warm through to make a rough purée. Add Mexican salsa, California Garden whole sweet corn and chopped jalapenos. Mix until combined. Remove from heat.
Spread mixture onto 4 of the tortillas and scatter over the cheese. Top with the remaining tortillas to make 4 sandwiches.
Wipe the frying pan with kitchen paper and return to the heat or heat another pan. Cook each sandwich for 1-2 minutes on each side until the tortillas are golden and the cheese is melting. Serve warm, cut into wedges, with extra salsa and sour cream.
